Tuesday – pot roast with potatoes and carrots, salad - I cook the roast in the crock pot with a packet of onion soup mix and toss the vegetables in to cook with the roast. I can't stand the smell of a roast cooking (but love to eat roast), so when I make this, I do it on a day I'll be out of the house.
Wednesday – made-from-scratch pizza, salad – I hope this is the last day we'll have salad, because by now I'll be sick of eating lettuce! Oh, the hardships one faces when there's just 2 vegetable eaters in the house!
Thursday – leftovers – this is my Bible study night, so I don't cook.
Friday – chicken pot pie – the cheater version using canned biscuits. DH hates this, so I don't make it too often.
Saturday – beef enchiladas – I haven't made these since I lived at home (9 years ago). I hope they're as yummy as I remember them!
Sunday – pancakes or waffles, sausage – this is really sad, but I've had a waffle iron for 2 years now that I've never used. I keep meaning to use it, but pancakes always sound yummier to me.
Yes, I know I have 2 big meat and potato meals back-to-back. I have to go ahead and cook the asparagus because it doesn't keep for long in the refrigerator, and I don't think that asparagus goes well with pot roast. As for the pot roast, it was a manager's special, so I have to cook it in the next few days. I would freeze the roast, but my freezer is full.
